How to make Payesh
Payesh also known as Kheer is a rice pudding, originating
from the Indian subcontinent, mostly from the state of Kerala, made by boiling
with milk and sugar one of the following: Basmati rice, broken wheat, tapioca,
vermicelli, sweet corn, etc.
It is flavored with cardamom, raisins, saffron, cashews,
pistachios, almonds or other dry fruits and nuts.
Payesh is usually served during the course of the meal or as
a separate dessert at times. It is also known in some regions as payasam,
payasa, and phirni.
It is usually considered to be creamy Bengali dessert made
with Basmati rice, milk, cardamom, nuts and fragrant rose water.
A luscious, tasty Indian dessert that you won't be able to
resist during the festive season of Durga Puja.
Payesh is a Bengali version of kheer.
Ingredients to make Payesh
1 cup Basmati rice (Premium Basmati Rice) (Main Ingredient)
2 liter milk
4 tblspn sugar
4 tblspn rice
1 tblspn ghee
2 green cardamoms
For Garnishing
Raisins
Almonds chopped and sliced
Cashew nuts chopped and sliced
Few drops Rosewater
Method
First and foremost wash the rice and let it dry on a cloth
or a place and leave aside.
Take a large pan, add milk into it and boil it. Let it
simmer or concentrate for some time till the volume becomes less.
Now add a tblspn of ghee to the washed rice and mix it.
Now add this rice to the milk which has been boiled and
simmered fine.
When the rice becomes little tender, add the sugar.
Now let the whole thing cook till the mixture starts
thickening as kheer.
Now add the raisins and dry fruits to garnish from top and
green cardamom powder.
Remove from heat and add the rose water.
Let it cool for some time.
Payesh is ready to be served.
