Payesh also known as Kheer is a rice pudding, originating from the Indian subcontinent, mostly from the state of Kerala, made by boiling with milk and sugar one of the following: Basmati rice , broken wheat, tapioca, vermicelli, sweet corn, etc. It is flavored with cardamom, raisins, saffron, cashews, pistachios, almonds or other dry fruits and nuts. Payesh is usually served during the course of the meal or as a separate dessert at times. It is also known in some regions as payasam, payasa, and phirni. It is usually considered to be creamy Bengali dessert made with Basmati rice, milk, cardamom, nuts and fragrant rose water. A luscious, tasty Indian dessert that you won't be able to resist during the festive season of Durga Puja. Payesh is a Bengali version of kheer.
