M utton Biryani forms a major part of any special occasion or function. Though Biryani can be made using Chicken or Vegetables, but special occasions always demands Mutton Biryani. It forms a specialty of Indian households and in this biryani masala is cooked separately and the rice separately, then the two are served together. The main ingredient for Mutton Biryani is Best Basmati Rice and Mutton. Payesh also known as Kheer is a rice pudding, originating from the Indian subcontinent, mostly from the state of Kerala, made by boiling with milk and sugar one of the following: Basmati rice , broken wheat, tapioca, vermicelli, sweet corn, etc. It is flavored with cardamom, raisins, saffron, cashews, pistachios, almonds or other dry fruits and nuts. Payesh is usually served during the course of the meal or as a separate dessert at times. It is also known in some regions as payasam, payasa, and phirni. It is usually considered to be creamy Bengali dessert made with Basmati rice, milk, cardamom, nuts and fragrant rose water.
